Langar is the Sikh tradition of the community kitchen. It is simple in design and radical in effect. Members of the community contribute according to their ability—a wealthy person may give a great deal, a poor person nothing at all. The food itself is basic, healthy, and prepared in bulk. No soda, no junk. The labor is entirely voluntary. No one is paid. The result is free, hot, nutritious meals served to anyone who walks through the door, without judgment or means-testing.

Imagine adapting this model citywide. Hungry communities organize themselves around existing institutions—churches, mosques, synagogues, community centers, or simply neighborhood groups willing to take responsibility. They recruit volunteers, establish routines, and demonstrate they can run a kitchen. Once ready, they apply to the city. The city’s role is limited and efficient: it purchases only approved healthy ingredients in wholesale bulk quantities and delivers them. The city does the grocery shopping at the lowest possible prices. Everything else—cooking, serving, cleaning, management—remains unpaid community labor.

This approach is cheaper than operating or subsidizing grocery stores. The city avoids retail overhead, staffing costs, inventory loss, and the complexity of running commercial enterprises. It buys only what is needed for meals, not the full range of products that fill supermarket shelves. Volunteers replace paid workers. The meals themselves are cooked rather than raw ingredients distributed, reducing waste and ensuring nutrition reaches people who may lack time, equipment, or knowledge to cook from scratch.

The benefits extend beyond calories. Langar builds community. People cook together, eat together, and serve one another. That social fabric discourages isolation and the conditions that breed crime. Free, reliable meals within walking distance eliminate the daily scramble for food in food deserts. No one has to choose between rent and dinner. Children eat. Working adults eat. The elderly eat. Dignity is preserved because the kitchen belongs to the community, not to a distant bureaucracy.

The model is not theoretical. Sikh gurdwaras have practiced Langar for hundreds of years. In New York, the gurdwara in Richmond Hill, Queens, has long demonstrated how it works at scale: disciplined volunteers, efficient bulk preparation, open doors, and consistent results. City Hall should send a team there—not as tourists, but as students. Learn the logistics, the volunteer culture, the standards of cleanliness and fairness, and the quiet pride that sustains the work.

Start in the neighborhoods that need it most. Let communities prove they can organize. Let the city supply only the ingredients. Scale what works. Expand outward until every hungry New Yorker can walk to a free, healthy meal. Then take the model nationwide.

Lowering grocery prices by 30 percent is a modest reform. Ending hunger is a transformative one. Langar has already shown how. The only question is whether New York is willing to learn from a practice that has fed people, without fanfare or profit, for centuries.
